How to Make Big Boi's Shrimp and Grits From Scratch

What is there to say about Big Boi? As one half of the groundbreaking hip hop duo Outkast, his work infused the music industry with refreshing originality, netting him 6 Grammy awards. His success as a tastemaker and mentor has also been wildly successful as he’s responsible for putting the likes of Janelle Monae and Killer Mike on the map.

We caught up with Sir Lucious Left Foot for the season finale of Made From Scratch, while he was preparing a luscious meal of shrimp and grits with his mother Rowena. Check out the recipe below and try it out for yourself. Keep in mind, when it comes to cooking Rowena’s motto is “Eyeball it.” Be sure to taste things as you go.


  • 1 cup grits, washed
  • 1 medium onion, diced
  • 1 green bell bepper, diced
  • 4 cups milk
  • 2 sticks butter
  • ½ stick cream cheese
  • ¼ cup pancake mix
  • 1 lb shrimp, peeled
  • 1 8-oz can lump crab meat
  • ½ cup vegetable stock
  • Worcestershire sauce
  • Old Bay seasoning
  • Garlic pepper
  • Salt
  • Pepper
  • Vegetable oil for cooking





Cook 1 cups of grits and 2 cups milk on medium high, stirring occasionally. When grits are boiling, turn heat down to medium low, cover, and let grits cook at a gentle boil for 10-15 minutes. When milk begins to absorb, stir in another cup of milk. Add ½ stick of butter, ½ stick of cream cheese, and 1 teaspoon salt, mixing thoroughly. After another 10 minutes, add ½ cup milk (or as needed) and cook until grits are cooked to a thick but smooth consistency. Thoroughly mix in ¼ stick butter just before serving.



Shrimp Mix

Add 1 tsp Old Bay, ½ tsp garlic powder, a pinch of salt and pepper to uncooked shrimp. Mix thoroughly and set aside in fridge. 

Heat up 1 stick of butter in frying pan to medium-high. When melted and hot, add green peppers and onions to pan and sauté for 10 minutes. Or until soft. Lower heat to medium low. Add ¼ cup canola oil, and when hot, slowly add ¼ cup of pancake mix, stirring as you go. Cook for about 10 minutes, constantly stirring until the roux is a tan color.

Bring heat up to medium-high and add seasoned shrimp to the pan and ½ cup vegetable stock. Add 1 tsp salt and 1 tsp Worcestershire sauce. Cook for about 2-3 minutes. Add lump crab meat and gently stir in without breaking up lumps. Cook for another 2-3 minutes or until shrimp is just done.
