How to Make Rick Ross' Homemade Spaghetti and Catfish from Scratch
If there's someone who knows all about hustling, it's the boss himself, Rick Ross, and the man is busier than ever, having just dropped his latest album Port of Miami 2 and his memoir, Hurricanes. Despite all his successes, sometimes it's the small, simple things in life that can bring a dose of joy—like a homecooked meal.
We joined Rick Ross and his mother Tommie for the Boss' favorite meal in this week's Made From Scratch: spaghetti, catfish, lima beans, and coleslaw. Check out the recipe below and try it out yourself!
(Adjusted for 4 servings)
Heat up pot to medium high. Add diced bell peppers and onions. Add one tsp salt. When soft, add ground beef, breaking up the larger chunks. Add 1 more tsp of salt and 2 tsp of lemon pepper. Stir and cook for about 7 minutes or until no longer pink. Add the jar of sauce, stir well, cover, and let it simmer on medium heat for 15 minutes. Serve with spaghetti!
Season catfish with 1 tsp salt, 1 pinch pepper, and 1 tsp lemon pepper per fillet. Add 1 cup corn meal into a large plastic sandwich bag. Place fillets in the bag, close it up, and shake until the fillets are fully coated with corn meal.
Heat up a skillet to medium high with about an inch of corn oil. When hot, gently place the fish in the oil and cook until both sides are golden brown (about 3-4 minutes per side). Drain the cooked fillets on paper towel and let them cool.
For a meal worthy of the Boss himself, serve the spaghetti and catfish along with boiled lima beans and cole slaw made with ranch dressing.
